Recipe: An Anti-Valentine’s Day Feast

Though I strongly feel that as far as holidays go, Valentine’s Day is as Hallmark as it gets, it’s impossible to ignore.  Many of you probably have romantic dining-out plans and others are probably attending some other anti-Valentine’s Day soiree. 

For those of you who haven’t planned an elaborate celebration of love, here’s a delicious recipe, dedicated to the Anti-Valentiners out there.

Blackened (heart) Chicken with Garlicky (breath) Mashed Cauliflower

Serves 4

  • Package of skewers, (12-16 soaking in cold water)
  • 8 pieces of thin cut boneless, skinless chicken breast (about 1 – 1.5 lbs)
  • 1 Red bell pepper, cut into 1 inch pieces
  • 1 bunch scallions, cut into 1 inch pieces
  • 1 medium red onion, cut into 1 inch pieces
  • 1 tablespoon dried thyme
  • 2 teaspoons paprika
  • ½ teaspoon cayenne
  • 1 teaspoon onion powder

Cauliflower Mash:

  • 2-3 cloves garlic, minced
  • 1 head cauliflower, roughly chopped
  • ½ cup buttermilk
  • 1 tablespoon oil
  • ¼ cup parmesan cheese

Chicken Marinade:

  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, halved
  • Salt and pepper to taste

Cut the chicken pieces into halves or thirds (depending on your size preference).  Marinate the chicken and vegetables for at least 1 hour. Season the chicken with the tyme, paprika, cayenne, onion powder, pepper and salt.  Assemble the skewers with the vegetables and chicken.  Heat a large cast iron pan to medium and cook each side, about 3-5 minutes each or until the chicken is cooked through.

In the meantime, in a large saucepan, add the oil, garlic and cauliflower.  Saute until it fragrant, add 1 tablespoon of water, cover and let steam for 2-3 minutes or until the cauliflower is cooked.  Removed from heat and begin to smash it with a fork or in a food processor, add the cheese and buttermilk slowly.  Season with salt and pepper.
