Recipe: Apples with Cherry Glaze

Out with the old and in with the new!  It’s a little sad to see last year’s apple harvest dwindle, as the last of the cold storage apples are sold at farmers’ markets.  But springtime brings back the cherry!  Cherries and berries (strawberries) are coming into season, and though local cherries aren’t available in New York quite yet, you can use frozen (and thawed) cherries to prep your palate for the season!

Cherries are technically a stone fruit (like apricots and peaches) and the varieties we see available at markets (Rainer, sweet, sour) are only a few of the many varieties.  This recipe works with any, though I prefer it prepared with sweet red cherries.

Apples with Cherry Glaze

Serves 4

  • 3 apples, sliced
  • ½ pound of cherries, pitted and halved
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar

In a medium saucepan, bring the cherries, sugar and vinegar to a boil.  Cook for about 5 minutes or until glaze begins to thicken.  Remove from heat and toss with the apples.
