Recipe: Beet, Carrot, and Apple Slaw

This recipe is quick, easy, and packs a very nutritious punch.  More importantly though, it’s simple and delicious!  The beets give it a surprising sweetness and bright color, while the apples and carrots add other dimensions of flavor.  I’ve distributed hundreds of taste samples of this slaw and most people are very pleasantly surprised.

The produce packs vitamins A, C, and K, fiber, antioxidants, flavanoids, folate, potassium.  When you add in the yogurt, you get extra calcium and protein.

However, there is one major flaw of this slaw: the grating is really, REALLY tiring.  So, if you have a mandolin or a food processor, I suggest you dust it off and use it — or you’re in for a great bicep workout.

Beet, Carrot, and Apple Slaw

Serves 4

1 Carrot, grated
1 Apple, grated
1 lb. Beets, grated
1 tablespoon apple cider vinegar
1 tablespoon oil
6 ounces (3/4 cup) plain, low-fat yogurt

Mix everything together and serve.

NUTRITION INFORMATION: Each serving has 139 calories, 3 grams of fat, 1 gram of saturated fat, 24 grams of carbohydrate, 5 grams of fiber and 5 grams of protein.  It contains no trans fat and only 4 mg of cholesterol.  This slaw is a great source of folate and vitamins A and C.
