Recipe: Cooling Cherry Granita with Mint

For those of you who may not be experiencing this, we’re in a heat wave for the next few days in NYC.  Heat wave means sticking no-cook recipes and enjoying cold foods that cool me down.  Fresh cherries are in season right now, and they’re a perfect treat to cool down with.

‘Granita’ is an Italian, semi-frozen dessert that consists of sugar, water and flavorings.  (And remember, other than added antioxidants, honey is merely sugar).

Cherry Granita with Mint

Serves 4

  • 2 cups pitted cherries – to pit fresh cherries, use a straw or tear ‘em up with your fingers
  • 1/3 cup honey
  • 2 tablespoons finely chopped mint
  • ½ cup dry white wine

Combine all ingredients in a food processor and blend well.  Pour into a glass baking dish and place in the freezer.  Every 20 minutes, scrape it with a fork.  Let freeze until it looks like shaved ice; about 1 hour.

*If you have simple syrup at home, you could substitute it for the honey.  If it weren’t so hot outside, I’d probably have prepared this with brown sugar dissolved in water.  The fact that honey is already a liquid makes it easier!
