Recipe: Easy Herbed Eggs

Eggs can be a great, easy meal anytime of day – not just for breakfast!  When I want an easy dinner, I’ll use this recipe with whatever ingredients I have around my kitchen.  The beauty is that this is a one pot, all-in-one meal but without all the fuss.  It’s also very easy to customize, just use different dishes for each person!  This recipe is nutritionally complete – especially if you add extra veggies!  Ideally, you’d use a small, oven safe baking dish with a 2-3 cup capacity.

Easy Herbed Eggs

Serves 1

  • 1 egg
  • 1 ½ tbsp fine herbs, finely chopped (i.e. rosemary, thyme, oregano, dill, cilantro, parsley)
  • ½ cup tomato sauce
  • 2 tbsp goat or part-skim ricotta cheese

Preheat oven to 325°F.  Pour the tomato sauce into the baking dish.  In a small bowl, mix the cheese and 1 tbsp of herbs then spread the mixture over (or place on top of) the tomato sauce.  Crack an egg on top and sprinkle with salt, pepper, and the remaining herbs.  Bake for about 20 minutes.

Potential additions:

  1. Caramelized Onions – take 1-2 tsp. olive oil and sauté sliced onion over medium-high heat for about 5 minutes.  Layer between the tomato sauce and the egg
  2. Leftovers – why not make this a more filling meal by adding some leftovers?!  Sliced steak (steak and eggs?!), roasted chicken, or even pulled pork.  If the meats have sauce, omit the tomato sauce in my recipe and use your own!
  3. Roasted vegetables – anything from mushrooms to
  4. Fresh vegetables – why not add some spinach, raw corn, diced bell pepper or broccoli?  The possibilities are endless and they’ll add another layer of texture and flavor.
  5. Spices – feel free to experiment!  Want spicy eggs?  Whisk your egg with a little paprika and cumin before baking.  Use different combinations of herbs and spices to make your meal different every time.
