Recipe: Lemony Brussels Sprouts Slaw
Brussels sprouts are usually thought of as a veggie that needs cooking but they can be very delicious without any heat. Sometimes I want an easy recipe, that doesn’t require too much “work” aka I want the directions to read: combine ingredients in bowl. Eat and enjoy. So, if you’re like me but still want something healthy – here’s a tangy and tart slaw that requires no mayonnaise or saturated fats!
Lemony Brussels Sprout Slaw
Serves 6
- 4 cups shredded or thinly sliced Brussels sprouts
- 1 medium Vidalia onion (or other sweet onion), diced
- 2 medium apples, diced
- ½ cup pecans, chopped and toasted (optional)
- 6 teaspoons dijon mustard
- 1 tablespoon olive oil
- 4 teaspoons lime juice
- Salt and pepper to taste
In a bowl, combine the Brussels, onion, apples and pecans. In another bowl, whisk the remaining ingredients together and pour over Brussels sprouts. Mix well until coated.
