Recipe: Maple Walnut Banana Bread

I’m not big on pastries or other baked goods but I really enjoy banana bread.  With a little bit of melt-y butter, it’s a perfect dessert or treat.  The problem is that often, banana bread just isn’t that healthy.  Between the sugar and white flour, it can feel like asted calories.  Here’s a recipe that’s easy and delicious – using whole wheat pastry flour and no refined sugar (and, it’s vegan)!

Maple Walnut Banana Bread

Serves 12

  • 3-4 very ripe bananas
  • ½ cup maple syrup
  • 2-3 tablespoons vegetable oil (or olive oil)
  • 1 teaspoon cinnamon extract
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole-wheat pastry flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup chopped walnuts

Preheat the oven to 350°F.  Spray a loaf pan with olive oil or other cooking spray.  Combine the bananas and maple syrup in a small bowl and mash them together with a fork.  Add the vegetable oil and extracts and mix.  In another bowl, combine the whole wheat pastry flour, baking soda and salt.  Mix until combined and slowly add it to the wet ingredients, without over mixing.  Lastly, add the walnuts and stir until incorporated.  Bake for about 30-40 minutes or until the top is golden and center is set.

    I made this bread yesterday and I like it a lot. It’s not too sweet and has a nice banana flavor. What drew me to it is that it only calls for 1/2 c. of maple syrup to sweeten it. My boys liked it, too. I didn’t understand why an egg was left out, so I added one. I will make this one again. It also took almost an hour to bake. I was surprised by your baking time estimate of 35-40 mins as I have baked many a banana bread recipe and loaves routinely take an hour.
