Recipe: Roasted Mustardy Cauliflower

Cauliflower is an important winter vegetable that should not be overlooked. Though I’ve heard claims such as ‘it has no taste’ or ‘its boring’ – I beg to differ.  Cauliflower is a cruciferous vegetable and it’s available in white, orange, purple and green.  So, the colors don’t have to be monochromatic and the taste definitely doesn’t have to be bland.

Cauliflower hasn’t been studied as much as other fruits and vegetables but preliminary research shows that it may significantly reduce the risk of prostate cancer (and potentially other cancers).  Either way, this dish is delicious and easy to make.  Mustard is also from the same family of vegetables (cruciferous) and it’s one of the healthier condiments!

Roasted Mustardy Cauliflower

Serves 6

  • 6 cups of cauliflower florets
  • ¼ cup Dijon mustard
  • 1/3- ¼ cup water
  • Olive oil spray
  • Salt and pepper

Preheat the oven to 400°F.  Combine the mustard and water together, stirring until the mustard is thinned but not watery.  Add the cauliflower to a large bowl and toss with the mustard mixture.   Spread into an even layer on 2 cookie sheets, spray lightly with olive oil, salt and pepper.   Roast for about 20-25 minutes or until the outer edges are have lightly browned.
