Recipe: Oversized Fortune Cookies

I first got into the idea of making fortune cookies because I was looking for a clever gift to deliver a message.  Subsequently, I decided these cookies were crispy, light, and fun to make.  I highly encourage you to write out some fortunes, though I’ll be honest, I have yet to find a way to prevent the fortune paper from getting a bit…oily.  I suppose you could try some kind of special oil-resistant paper but I’m a dietitian, not a Papyrus Professional, so that’s way out of my realm of expertise.  You’re on your own!

Oversized Fortune Cookies

Makes 10-12 cookies

  • 2 large egg whites
  • 1 ½ teaspoons almond extract (or get creative and try butter pecan extract or coconut)
  • 3 tablespoons vegetable oil
  • 10 tablespoons flour
  • 2 teaspoons cornstarch
  • ¼ teaspoon salt
  • 3 teaspoons water
  • 8 tablespoons sugar

Preheat oven to 300ºF and line a baking sheet with parchment paper or a silicone mat. In a medium bowl, lightly beat egg whites, extract, and oil until frothy but not stiff.  In a separate bowl, sift the flour, cornstarch, salt and sugar together.  Stir water into the dry ingredients and then add the flour mixture to the remaining wet ingredients.  Stir lightly until the batter is smooth. Spoon 1 tablespoon of batter onto the baking sheet and cook 12-15 minutes or until edges are browned.  While the cookies bake, cut fortune paper to be 3 ½” x ½” and write out messages.

When the cookies are finished, be prepared to remove and shape them immediately.  They will be hot so be prepared with heat resistant gloves or do your best not to burn yourself!  Place your fortune inside and then gently bring one side over (like a taco) to form a half moon shape.  Next, bend the middle of the cookie perpendicular to the straight edge, forming the traditional fortune cookie shape.  Once they’re formed, let them cool inside a glass so they retain the shape.

A note on fortunes:  Writing fortunes can be tricky.  The writer in me wants to give you advice on how to succinctly write a clever fortune; however, I don’t have any great suggestions.  Flattery and inside jokes have always worked for me!   Just know your audience and check out these websites for ideas:
