Recipe: Raw Cauliflower Salad

This salad combines a variety of raw but very tasty winter fruits and vegetables into an easy to make, flavorful dish.  The great thing about this salad is that you can pretty much use whatever you have at home to throw this together.  For instance, replacing the red apple with red grapes or dried cranberries will still add sweetness; or replacing the green onions with thinly sliced red onion will also do the trick!

During the winter, life can seem lackluster and bland, so don’t let your food become monochromatic and one-note too!

Raw Cauliflower Salad

Serves 8

  • 1 small head cauliflower, thinly sliced
  • 3 red apples, diced
  • 1 cup sliced celery
  • ½ cup walnuts, chopped
  • 5 small green onions, sliced
  • 3/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Combine cauliflower, apples, celery, onions, and parsley.  In a separate container, shake garlic, vinegar, oil, salt, and pepper vigorously.  Pour over salad and toss lightly, refridgerate until ready to serve.
