Recipe: Raw Tomatillo Salsa
Tomatillo salsa (aka salsa verde) is very common in Mexican and Latin American cuisine – sometimes spicy, sometimes sweet. Though they’re typically green, there’s also a purple variety that tastes very similar.
Usually the best way to bring out the sweet flavor of tomatillos is by roasting them – but boiling is not uncommon either. Here, the tomatillos are raw and with a touch of honey, the texture and flavor are both unique.
Raw Tomatillo Salsa
Serves 10
- 12 tomatillos, husks removed, rinsed, chopped
- 1 red onion, chopped
- 1 jalapeno, (seeded if you prefer a mild salsa), chopped
- 1 tablespoon olive oil
- 3 tablespoons lime juice
- 1 tablespoon honey
- Handful of cilantro, chopped
- salt and pepper
Put all the ingredients in a blender and pulse until blended.
