Recipe: Spicy Avocado Gazpacho

Gazpacho is my summer alternative to salads – it packs the punch of fresh vegetables but in a cool soup that provides additional fluid in the hot summer months.  You could certainly make this recipe with fresh tomatoes, but I like the thickness that tomato juice provides.  The avocado makes it hearty and filling.  To prevent the avocados from browning, chop them just before you puree them in the food processor and squeeze the lime juice on them immediately.  As you blend in tomato juice, the color will be persevered.

Spicy Avocado Gazpacho

Makes 14 cups

  • 2 avocados, roughly chopped
  • 2-3 cloves garlic
  • 1 lime, juiced
  • 1 small bunch cilantro
  • 8 cups 100% tomato juice (use the hot and spicy version if possible)
  • 3-4 tbsp horseradish (if using plain tomato juice), more if you prefer it spicier
  • 1-2 teaspoons Worcestershire sauce
  • 2 cucumbers, diced
  • 2 red onions, finely chopped
  • 2 red bell peppers, diced
  • 3 tbsp red wine vinegar
  • Salt and pepper to taste

In a food processor, combine the lime juice, avocados, garlic and cilantro.  Pulse until the avocados are smooth, adding tomato juice ½ cup at a time.  Combine the cucumbers, red onion, and bell peppers, remaining tomato juice, horseradish, Worcestershire sauce, and red wine vinegar in a large bowl.  Whisk in the avocado mixture until smooth.
