Recipe: Sweet Wheat Berry Salad

This wheat berry salad is a great combination of whole grains and protein, while packing a sweet and hearty flavor.  It’s energy dense and is a great side for any summer party, from a brunch to a barbeque.  Because the dressing is thin, it can settle to the bottom, so if you’re making it ahead of a time, remember to toss it again before you serve it.

Sweet Wheat Berry Salad

Serves about 10

  • ½ cup soft wheat berries
  • 1 cup quinoa
  • 1 cup pecans, roughly chopped
  • 2 stalks celery, finely diced
  • ¾ cup cranberries
  • 3-4oz feta cheese, cubed or crumbled
  • 2 small apples, cored and diced
  • 1 orange, juiced
  • ¼ cup nonfat yogurt
  • 2 tablespoons olive oil
  • mint (optional)

Cook the wheat berries and quinoa according to package directions.* Preheat the oven to 350°F and spread the pecans evenly on a cookie sheet.  Toast for about 10-15 minutes, shaking 2 or 3 times during the cooking time, until nuts are golden and fragrant.

In a large bowl, combine the wheat berries, quinoa, pecans, celery, cranberries, apple, and cheese.  In a small bowl, whisk the orange juice, yogurt, and olive oil.  Add the dressing to the salad and toss to coat.  Garnish with mint.

*Contrary to popular belief, neither wheat berries nor quinoa need to be soaked overnight.
